The War Room in DR. STRANGELOVE is my de facto favorite.

Love Deckard's apartment and the room where he meets Tyrell and Rachel in BLADE RUNNER.

I'll join ambler for 2001 and ALIEN, and I'll throw in Norman Bates' parlor.

Oh, and the... brainwashing room thingy in THE MANCHURIAN CANDIDATE.

If you want another early example, Murnau's "Sunrise..." sets apparently cost an absolute fortune and were rather groundbreaking for their era.

Also from 50's SF, anything in FORBIDDEN PLANET.

The recreation of the Opera Garnier for THE PHANTOM OF THE OPERA (1925/1929) is nothing short of stunning.
