Good news, this. IMO, as much as possible should be done to avoid Star Wars films looking like a big f*cking digital playground like the last two did.

Not sure it will make much of difference, since the whole film will be digitally processed anyway. Look at nuTrek.

Probably won't make a difference ultimately, as per MP's point. Anyway, as even non-scifi/fantasy action movies pack enough CGI to make your eyes bleed, I doubt we'll get anything that looks remotely like the sets and miniatures of the originals (physical objects in movies, how 'bout that!)

Modern film stocks look and feel nothing like older ones. Kodak stocks are designed to improve and better digital cinematography, and then are run to a digital intermediate which is then digitally color timed and rarely if ever printed back to film. So the entire process is useless unless the work chain is fully analog and film 100% before the DI. And additionally 99% of post work is done at 2K resolution instead of 4K, with only a handful of theaters being equipped for 4K and a miniscule portion of DCPs being 4K themselves.

The only times I have seen new films look like film are rare, for example Anton Corbijn's Control and The American which were both film shoots and 35mm prints.

Basically imagine the new Star Trek but with a feeling of Super 8. That's the closest possible approximation of VII.
